My philosophy is patience.
A ham has already lived a long life before it reaches my stand. My work is not to improve it. It is to reveal it — slice by slice, without haste, without waste. Cut too thick and the perfume stays locked. Cut without care and the plate becomes noise. I wait for the right thickness, the right shine, the moment the fat turns translucent.
I do not perform for applause. Presence is enough. When the knife is honest, people lean in on their own. The spectacle is not invented. It appears when the craft is done with respect, in front of those who will taste it.

From the Iberian oak forests to your event.


I learned to cut in Spain. There the ham is not decoration. It is the whole argument. You listen to the piece, you find the grain, and you cut until the slice can carry its own perfume.
That discipline followed me through Robles, onto the MS Deutschland, and into the Alps at Hotel Aurelio in Lech. The rooms change. The work does not.
I take the stand to weddings and private tables. I am not there to fill a buffet. I am there to give the evening a centre — one plate at a time, done properly.
